→ Chili Oil Dipping Sauce

15 - Chili oil, 4 tablespoons
16 - Soy sauce, 1 tablespoon
17 - Black vinegar or rice vinegar, 1 teaspoon
18 - Toasted sesame seeds, 1 teaspoon
19 - Spring onion, 1 teaspoon, finely chopped

# How to Make It:

01 - Combine ground pork, spring onions, garlic, ginger, soy sauce, sesame oil, Shaoxing wine, sugar, white pepper, napa cabbage, and cornstarch in a mixing bowl. Mix thoroughly until the mixture becomes well combined and slightly sticky in texture.
02 - Place a dumpling wrapper in your palm. Spoon approximately 1 teaspoon of filling into the center of the wrapper. Dip your finger in water and moisten the edge of the wrapper. Fold the wrapper in half and pinch the edges firmly to seal, creating pleats if desired.
03 - Repeat the assembly process with all remaining wrappers and filling. Cover the completed dumplings with a damp cloth to prevent them from drying out during the air frying process.
04 - Preheat your air fryer to 375°F for 3 minutes to ensure optimal cooking conditions for the dumplings.
05 - Lightly spray or brush each dumpling with cooking oil. Arrange the dumplings in a single layer in the air fryer basket, ensuring they do not overlap and have adequate space for air circulation.
06 - Air fry the dumplings for 8 to 10 minutes, turning them halfway through the cooking process, until they achieve a golden and crispy exterior.
07 - While the dumplings are cooking, combine chili oil, soy sauce, black vinegar, toasted sesame seeds, and spring onion in a small bowl. Stir to combine all ingredients thoroughly.
08 - Transfer the hot dumplings to a serving plate and present the chili oil dipping sauce in a small bowl on the side.

# Expert Tips:

01 -
  • Healthier Crunch: Achieve that signature crispy texture using an air fryer instead of deep frying.
  • Bold Flavors: The combination of sesame oil, Shaoxing wine, and chili oil creates a complex, savory profile.
  • Quick and Easy: With only 15 minutes of cooking time, these are perfect for a fast snack or appetizer.
02 -
  • Freezer Friendly: Dumplings can be frozen before cooking. When ready to eat, air fry them directly from frozen and add 2–3 minutes to the total cooking time.
  • Perfect Seal: Ensure you use enough water to moisten the edges so the dumplings don't burst open during the air frying process.
  • Oil Brush: A light coating of oil is essential for achieving that golden brown color and preventing the wrappers from looking dry.
