# How to Make It:

01 - Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish with cooking spray or a small amount of oil.
02 - Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes and chopped onion. Cook for 7–8 minutes, stirring occasionally, until the sweet potatoes are just tender.
03 - Stir in the diced red bell pepper and continue cooking for 3 minutes. Add the chopped spinach and cook until wilted, about 1 minute. Remove the skillet from heat.
04 - Spread the cooked vegetable mixture evenly across the bottom of the prepared baking dish.
05 - In a large bowl, whisk together the eggs, milk, salt, black pepper, smoked paprika, and garlic powder until fully combined and slightly frothy.
06 - Pour the egg mixture evenly over the vegetables in the baking dish. Sprinkle the shredded cheddar cheese and crumbled feta cheese (if using) on top.
