# How to Make It:
01 - Preheat the oven to 350°F. Lightly grease a 9-inch baking dish.
02 - In a large mixing bowl, toss peaches with granulated sugar, cornstarch, grated ginger, lemon juice, and vanilla extract until evenly coated. Spread mixture evenly in the prepared baking dish.
03 - In a separate bowl, whisk together flour, brown sugar, ground ginger, cinnamon, and salt. Add cold butter cubes and work them into the mixture using a pastry cutter or fingertips until soft, coarse crumbs form.
04 - Evenly sprinkle the crumble topping over the peach filling. Bake for 35 minutes, or until the topping is golden and the filling bubbles around the edges.
05 - Remove from oven and allow to cool for 10 to 15 minutes before serving. Serve warm, optionally accompanied by vanilla ice cream or whipped cream.
