Step 1:
Preheat the oven to 180°C (350°F). Lightly grease a 23 cm (9-inch) baking dish.
Step 2:
In a large bowl combine peaches granulated sugar cornstarch grated ginger lemon juice and vanilla extract. Toss until the peaches are evenly coated. Spread the fruit mixture evenly in the prepared baking dish.
Step 3:
In another bowl whisk together flour brown sugar ground ginger cinnamon and salt. Add the cold butter cubes. Using a pastry cutter or your fingertips work the butter into the dry mixture until it resembles soft coarse crumbs.
Step 4:
Sprinkle the crumble topping evenly over the peach filling.
Step 5:
Bake for 35 minutes or until the topping is golden and the filling is bubbling around the edges.
